Rews on Mills is seeking an experienced Beverage Manager to join the opening leadership team.

The Beverage Manager will be responsible for the execution and continued development of the Bars beverage program, including cocktails, spirits, wine, beer, non-alcoholic offerings, bar operations, and team education. This is both a creative and operational role. We are looking for someone with strong beverage knowledge who also understands inventory, cost control, systems, training, and service.

Responsibilities

• Lead daily bar operations and beverage service

• Maintain cocktail specifications and execution standards

• Manage beverage ordering, inventory, pars, and cost controls

• Oversee batching, prep, production, and bar organization

• Support ongoing cocktail and beverage development

• Assist with wine, spirits, beer, and non-alcoholic programming

• Train and develop bartenders and service staff

• Conduct regular tastings and beverage education

• Build and maintain relationships with suppliers and industry partners

• Monitor waste, variance, and beverage profitability

• Support events, tastings, collaborations, and special programming

• Work closely with Culinary Manager & General Manager

Qualifications

• Previous beverage management or senior bar leadership experience 

• Strong knowledge of classic and contemporary cocktails

• Solid understanding of spirits, wine, beer, and beverage service

• Experience with beverage costing, inventory, and purchasing

• Strong leadership and training skills

• High attention to detail and consistency

• Strong organizational and communication skills

• Ability to balance creativity with operational discipline

 

Rews on Mills is developing a beverage program intended to be a significant part of the restaurant’s identity. The Beverage Manager will have an active role in shaping the program, developing the team, and maintaining the standards behind it.
